INGREDIENTS
1kg floury potatoes
250g STAARCO Tipo 00 Flour
1 large egg
1 tsp salt
Extra flour for dusting
METHODS
Boil potatoes with skin until tender
Drain and cool slightly, then peel
Pass potatoes through a ricer onto work surface
Add salt, STAARCO flour and egg to potatoes
Knead gently until soft dough forms
Divide dough into 4 portions and roll into long cylinders
Cut cylinders into 2cm pieces
Gently press each piece against fork tines
Cook in boiling salted water until they float
Drain and toss with your favorite sauce
