INGREDIENTS

  • 500g STAARCO Tipo 00 Flour

  • 325ml lukewarm water

  • 10g sea salt

  • 3g fresh yeast

  • 400g crushed San Marzano tomatoes

  • 250g buffalo mozzarella

  • Fresh basil leaves

  • Extra virgin olive oil

METHODS

  1. Dissolve yeast in lukewarm water and let rest for 5 minutes

  2. In a large bowl, mix STAARCO Tipo 00 flour with salt

  3. Slowly pour yeast water into flour while stirring continuously

  4. Knead for 10-15 minutes until you have smooth, elastic dough

  5. Cover with damp cloth and let rise at room temperature for 2 hours

  6. Divide dough into 4 balls, cover and refrigerate for 8-12 hours

  7. Remove from fridge 2 hours before use. Preheat oven to 250°C (480°F)

  8. Gently stretch each ball into a thin disc using your hands

  9. Top with crushed tomatoes, torn mozzarella, and drizzle of olive oil

  10. Bake in hot oven for 5-7 minutes until golden

  11. Garnish with fresh basil and serve hot!
