INGREDIENTS
500g STAARCO Tipo 00 Flour
325ml lukewarm water
10g sea salt
3g fresh yeast
400g crushed San Marzano tomatoes
250g buffalo mozzarella
Fresh basil leaves
Extra virgin olive oil
METHODS
Dissolve yeast in lukewarm water and let rest for 5 minutes
In a large bowl, mix STAARCO Tipo 00 flour with salt
Slowly pour yeast water into flour while stirring continuously
Knead for 10-15 minutes until you have smooth, elastic dough
Cover with damp cloth and let rise at room temperature for 2 hours
Divide dough into 4 balls, cover and refrigerate for 8-12 hours
Remove from fridge 2 hours before use. Preheat oven to 250°C (480°F)
Gently stretch each ball into a thin disc using your hands
Top with crushed tomatoes, torn mozzarella, and drizzle of olive oil
Bake in hot oven for 5-7 minutes until golden
Garnish with fresh basil and serve hot!
